The Yield & Margin Calculator Instructional is an in-depth look at how best to keep track of harvest numbers in order to create your own ranch benchmarks and standards for carcass performance over time, how to calculate carcass yield, and how to determine best prices and margins across multiple revenue channels.
This is a 2-part learning session: first, we’ll watch a webinar together on March 1 that walks you through a proprietary yield and margin calculation tool that can be used to evaluate your options for profitable cuts based on actual harvest numbers and carcass yields, and by testing out various prices and margins across multiple revenue channels. The calculator also accounts for comparing options for full cut-out versus half, quarter, and eighth sales. It’s a practical “one-stop-shop” tool you can take back to the ranch to utilize for harvest tracking, processing/yield record-keeping, and pricing/margin analysis.
Then you’ll have two weeks to practice using the calculator.
In part two on March 15, we will gather as a small group of producers to look at numbers live, and answer questions about using the tool. Bring some hypothetical harvest numbers to the table and watch examples be populated in excel in real time, and analyze results together with a group of peers to help you understand how best to use the calculator. We’ll be joined by business educator Olivia Tincani.

Olivia Tincani is a food and agriculture business consultant and educator with 20 years of experience in the field. Olivia Tincani & Co. provides business, financial and strategic planning and technical assistance for small-scale independent farms, ranches, food businesses, and the institutions that service them. She has specific expertise in entrepreneurial empowerment for farmers and ranchers, program and curriculum design, whole animal supply chains, livestock businesses, and community building. An ambitious spirit infuses her teaching and consulting work, inspired by her personal entrepreneurial endeavors. She currently designs and executes food and farm business training programming for the Southwest Grassfed Livestock Alliance, Intertribal Agriculture Council, Ecotrust, Fibershed, Chicago Botanic Garden’s Windy City Harvest Incubator, and the Grazing School of the West. Past projects include work with venerated organizations such as Glynwood and Pie Ranch, alongside independent coaching for a roster of small and mid-scale sustainable farms. She served as a Business Strategist and Communications Director for 8 years for Rancho Llano Seco in Chico, CA. She has deep history in food business operations as the co-founder of food service management company Just Fare, Farm 255 and Farm Burger, landmark restaurant enterprises with jointly-operated vegetable and pasture-based livestock farms in the southeast. She is on the Advisory Boards of the National Farm Viability Conference and Bernoulli Finance, and was a founding Board member of Kitchen Table Advisors. Olivia splits time between Sonoma County (CA) and her husband’s family farm and winery in the Valtènesi region of Italy, with her hands in the dirt and her skin in the game.
